Very traditional french stuff, isn’t it !
For 2 crêpes
80g buckwheat flour
20g arrow root (or cornstarch)
a pinch of salt
1 tsp olive oil
150ml water
Mix all dry ingredients and then pour oil and water little by little, untill you have a nice batter !
Pour in a hot flat pan (a « crêpière » if you’re french !) and cook both side untill golden.
I filled my crêpe with baba ganoush (which is call « eggplant caviar » in french, classy huh !), smoked tofu, rucola and tomato. Perfect lunch indeed !

Pour 2 crêpes
80g de farine de sarrasin
20g de arrow root (ou fécule de maïs)
une pincée de sel
1 c à café d’huile d’olive
150ml d’eau
Mélangez tous les ingrédients secs puis ajoutez petit à petit l’huile et l’eau, jusqu’à obtenir une pâte à crêpe onctueuse. J’ai garni ma crêpe avec du caviar d’aubergine, du tofu fumé, de la roquette et des tomates. Un déjeuner parfait !
