Indian style sweet potato pilaf

Ingredients (for 2 if main, 4 if side)

  • 1 cup basmati rice
  • 1 onion, chopped
  • 1 small sweet potato, diced
  • 1 handful pistachio
  • a little fresh coriander
  • 1 stem garlic
  • 1 tsp ginger paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder

 

  1. In an heavy bottomed pan fry the onion and the garlic with a little oil. Add the spiced, cook for few more minutes and add the sweet potato. Cover and cook for 10 minutes.
  2. Add the rice and 2 cups of water. Mix, lower the heat and cook for 15 mintues, until all the water’s gone !
  3. Add the pistachios & coriander at the end and serve right away !
