This is a recipe I created to enter a french blog challenge. The subject was fougasse, a traditional bread from Provence you probably know about. It could be a perfect winter recipe, served with soup for example !
Ingredients :
- 100g mashed sweet potato
- 200g flour
- 50ml water
- 1 Tbsp yeast
- 1 Tbsp sugar
- 3 Tbsp olive oil
- 2 Tbsp sun dry tomato, minced
- 1 Tbsp basil, chopped
- few cherry tomatoes
- Provence herbs
- Mix the yeast with sugar in the lukewarm water. Let it bubble for 10mn.
- In a bowl combine the sweet potato, flour, yeast, olive oil, sundry tomatos and basil. Mix with a spoon and then knead for few minutes until smooth.
- Let the dough rise for 1 hour, covered with a towel, until doubled in size.
- Knock the dough back down, knead a little and then form the fougasse. It should be no more than 2cm thick. With a sharp knife cut 5 holes in the fougasse.
- Sprinkle with herbs and push tomatos in the dough. Spray a little olive oil, cover and let rise again for 30mn.
- Preheat the oven to 425°F (220°C) and bake for 20mn.
- Serve warm, and enjoy !
