Ingredients (for 2 if main, 4 if side)
- 1 cup basmati rice
- 1 onion, chopped
- 1 small sweet potato, diced
- 1 handful pistachio
- a little fresh coriander
- 1 stem garlic
- 1 tsp ginger paste
- 1 tsp cumin powder
- 1 tsp coriander powder
- In an heavy bottomed pan fry the onion and the garlic with a little oil. Add the spiced, cook for few more minutes and add the sweet potato. Cover and cook for 10 minutes.
- Add the rice and 2 cups of water. Mix, lower the heat and cook for 15 mintues, until all the water’s gone !
- Add the pistachios & coriander at the end and serve right away !
