Isn’t this a great way to get kids (and men) to eat veggies… Try and you’ll tell me about it !
Ingredients (to make 10 small waffles) :
- 2 zucchinis
- 1 small carrot
- 1/2 onion
- 1 small sweet potato
- 4 Tbsp soy flour
- 4 Tbsp coconut milk
- 1 tsp curry powder
- Grate the zucchini, salt them and let them rest before draining all the excess water.
- Grate the rest of the veggies, combine them in a big bowl. Add soy flour & coconut milk little by little. Mix very well.
- Cook in a warm waffle iron 5 minutes (add some flour & milk mix if the waffle separates when opening the iron)
- Eat warm, by itself or with some naughty toping !
