Isn’t this a great way to get kids (and men) to eat veggies… Try and you’ll tell me about it !

Ingredients (to make 10 small waffles) :

  • 2 zucchinis
  • 1 small carrot
  • 1/2 onion
  • 1 small sweet potato
  • 4 Tbsp soy flour
  • 4 Tbsp coconut milk
  • 1 tsp curry powder
  1. Grate the zucchini, salt them and let them rest before draining all the excess water.
  2. Grate the rest of the veggies, combine them in a big bowl. Add soy flour & coconut milk little by little. Mix very well.
  3. Cook in a warm waffle iron 5 minutes (add some flour & milk mix if the waffle separates when opening the iron)
  4. Eat warm, by itself or with some naughty toping !
