For 4 stuffed parathas
150g flour
100g plain soy yogurt
1/2 tsp salt
Stuffing :
1 cup cooked & mashed red kuri squash
a handfull fresh cilantro
Mix parathas ingredient together and knead untill you have a bouncy & soft dought.
Divide in 4. Mix filling ingredients together.
Roll down to an oval shapen. Spray with oil, place a fourth of the filling on one side, fold, press edges together and gently roll down.
Spray with oil and cook on a very hot pan, 2 minutes on each side.
When paratha is ready, place it in a plastic bag and keep warm & soft untill party-time…
