sweet butternut & tomato soup

I think i’m addicted to butternut …

 

 

  • 1 small butternut seeded & diced
  • 1 can diced tomato
  • 1 onion, chopped
  • 1 Tbsp garlic powder
  • 1 Tbsp Provence herbs
  • a little thyme
  • soy milk
Cook the onion in a little olive oil.
Add the garlic, fry it a few minutes and then add the butternut. Let it brown a little and add the tomatoes plus half a liter (2 cups) water
Mix
Stir in the herbs and cook on low heat until the butternut is well cooked, about 45 minutes maybe.
Turn off the heat and mix with a stick blender. Add a little soy milk and serve right away with a little thyme sprinkled on top !
