(vegan) Mashed cauli & gravy with roasted veggies

Yesterday’s diner was inspired by Lindsay (aka Happy Herbivore) gravy recipe ! I so wanted to try it that I made a diner around it !

 

Mashed cauli ingredients :

  • 1 cauliflower
  • 2 Tsp olive oil
  • 4 Tbs soya cream
  • 1 pinch nutmeg
  • thyme, salt, pepper

 

Ingredients for the gravy :

  • 1/4 cup whole wheat flour
  • 1/4 cup nutritional yeast
  • 2 cup boiling water
  • 1 pack of mushroom stock
  • 1 tsp onion powder
  • 1 tsp garli powder
  • 1 Tsp soy sauce
Ingredients for roasted veggies :
  • 1 small butternut
  • 1 big parsnip
  • 2 ou 3 carottes
  • 2 ou 3 zucchini

*** first the veggies ***
Peel & cut the veggies, spray with olive oil, sprinkle with salt, pepper & herbs and place on a baking sheet. Grill for 30 minutes, mixing couple of time.

 

*** during that time… ***
Prepare the cauliflower in small florets. Cook with a little water in a big pan, between 5 and 10 minutes. Cauliflower should be tender but not mushy. Drain the water and mix in your blender with the rest of the ingredients untill you get a creamy consistance. Put back in the pot (and reheat right before eating)
*** and let’s cook some gravy ! ***
In a small pan mix flour and yeast and toast for a few minutes on low heat. Add the other ingredients and cook, whisking untill you get a « gravy-like » texture.
Now you only have to take the veggies out from the oven, reheat the mashed cauli and the diner will be perfect !
