Pad-thaï style salad

For 2

  • 4 sucrine lettuce chopped
  • 1 carrot grated
  • 1 mini cucumber grated
  • 1 handful cherry tomatoes halved
  • 1 Tbsp plain peanut butter
  • the juice from 1 lime
  • 1 tsp tamarind paste
  • 1 tsp agave syrup
  • 1 tsp soy sauce
  • 1/2 bunch fresh cilantro (coriander) with stem
  • 1/2 tsp sriracha (only if you like it spicy !)
  • 1/2 cup dry roasted unsalted peanut
  1. Prepare the dressing : mix together peanut butter, lime juice, tamarind paste, agave, soy sauce, sriracha if used and the cilantro’s stem. Add water little by little until you get the consistency you prefer.
  2. Mix all the veggies in a bowl.
  3. Combine the dressing, fresh cilantro’s leaves and peanut. Toss & serve right away !
