Everybody loves pesto !

What we don’t like is the gigantous quantity of olive oil used to make de pesto. But here’s the solution, found in Isa Chandra Moskowitz « Appetite for Reduction » : Edamame in replacement of oil & pine nut.

It’s amazingly working ! Go ahead and try it !

 

  • 200g of edamame (thawed)
  • 1 small bunch of fresh basil
  • 1 tsp of dry garlic
  • 2 Tbsp of olive oil
  • 1 Tbsp fresh lemon juice
  • a pinch of salt

 

Mix all of this with a blender, adding water little by little till you get a creamy consistance. Serve with good whole wheat pasta and enjoy !
